Recipe: Orange Cake

After opening your fast nothing is better than having some tea with your favourite slice of cake. Check out this amazing Orange Cake recipe and enjoy it with friends and family this Ramzan. 

Ingredients:

For the cake:

Unsalted butter 1/2 cup (115 gms)

Castor sugar 3/4 cup (165 gms)

Eggs 2

Orange juice 1 tbsp

Salt a pinch

Vanilla essence 1/2 tsp

Orange essence (optional) 1/2 tsp

Flour 11/2 cups(225 gms)

Baking powder 1 tsp

Milk 1/2 cup (120 ml)

For the glaze:

Orange juice 3/4 cup

Sugar 1/2 cup

Corn flour 1 tsp

Method:

Pre-heat your oven at 325 F / 160 C. Grease a pan thoroughly with a nonstick cooking spray.

In the bowl, cream together the softened butter and sugar till it becomes light and fluffy.

Add the eggs one at a time and beat for 20 seconds each time.

Then add vanilla extract, orange essence, orange juice and beat till combined.

Add flour and baking powder. Beat on low speed till combined. Do not over mix.

Now add the milk and beat till smooth.

Pour the batter in to your prepared pan and give it a gentle tap to remove any bubbles.

Bake for 45-50 minutes or till a toothpick inserted in the centre comes out almost clean.

While the cake is baking start preparing the glaze. Bring all the ingredients of the glaze to a boil on low-medium heat. Whisk it constantly. Let it simmer on low heat for 3-5 minutes. The mixture will thicken. Keep it aside.

Take out the baked cake and place it on a wire rack to cool.

With a fork, gently make holes in the cake and pour the glaze on top of it (while it is still in the pan and hot). Let the cake cool.

Place a wax paper/baking paper on top of the pan and invert it on the cooling tray. The paper will help absorb any of the excess juice that comes out of the cake pan. Let the cake cool completely now.

Serve with some powdered/icing sugar sprinkled lightly on top.
