Omelet in a mug

Ingredients

1 egg

2 egg whites

1 tablespoon of diced green bell pepper

2 tablespoons of cheddar cheese, shredded

Salt and ground black pepper, as required

Method

Grease a microwave-safe cup with nonstick spray or oil and add eggs, egg whites, cheddar cheese, bell pepper, salt and ground pepper in it.

Microwave the mixture for a minute and stir.

Put the cup back in the microwave for a minute or two till the eggs are set, depending on your microwave.

Serve with cheddar cheese shredded on top.

Oats and Chicken Porridge

Ingredients

2 boneless chicken breasts

1 cup rolled oats

1 tablespoon oil

1 tsp cumin seeds

3 Bay leaves

1 tablespoon ginger, finely chopped

1 tablespoon crushed garlic

2 green chillies, finely chopped

1/2 teaspoon turmeric powder

1 teaspoon red chilli powder

1 teaspoon black pepper powder

Salt to taste

6-8 Fresh coriander sprigs

1/2 cup browned onions + for garnishing

1 tablespoon butter

1 Lemon (juiced)

Method

Heat oil in a nonstick pan, add cumin seeds, bay leaves, ginger and garlic and fry for a minute.

Chop the chicken into small pieces and keep aside.

Put green chillies and chicken pieces in the pan and mix thoroughly.

After that, put in the oats, red chilli powder, salt and black pepper powder and stir.

Put two cups of water in the pan and mix again and continue cooking till the chicken is cooked properly.

Chop coriander sprigs finely and add in the pan along with browned onions, butter and lemon juice.

Put in the egg whites and cook for three to four more minutes.

Serve in a bowl with brown onions garnished on top. 

Egg in a Blanket

Ingredients

2 eggs

2 brown bread slices, sliced

2 tablespoons of butter

Chilli flakes to taste

Oregano to taste

Salt to taste

Method

Take a heart-shaped or any other cookie cutter and cut out the centre from each bread slice.

Heat a tablespoon of butter on a pan and put a slice of bread on it on low flame till it turns brown, after which you flip it.

Cautiously break an egg into the heart-shaped hole and place a lid on the pan, leaving it to cook for three to four minutes.

Slide carefully on a plate and serve.
