Whether you like sweet or savoury, no Iftaar is complete without chaat.

From the basic chana and fruit chaat to the spicier and tangier bhel puri, sev puri and samosa chaat, here are 9 chaats you must-try at home this Ramzan.

1) Chana Chaat

Ingredients

500 gm boiled chickpeas

250 gm boiled potatoes (peeled and cut into cubes)

4 green chilies finely chopped

1/2 cup fresh coriander leaves finely chopped

1/2 cup tamarind chutney 

2 tbsp lemon juice

1 tbsp chat masala

1 tbsp sugar

1 tsp red pepper crushed

1 tsp salt

Papri/ Chili chips for garnish

Method

Place all ingredients in a large mixing bowl and combine together. Garnish with coriander leaves, sliced onions and papri/ chili chips. Your chaat is ready to serve.

2) Bhel Puri Chaat

Ingredients:

2 cups puffed rice 

5-6 papdi 

1 tablespoon roasted peanuts

1/2 cup sev 

1/2 cup onions, finely chopped

1/2 cup potatoes (boiled and cut in cubes) 

1/2 cup tomato, finely chopped

1 green chilli

2 tablespoons fresh coriander leaves 

1/2 tablespoon lemon juice

2 teaspoons tamarind chutney 

2 teaspoons green chutney

1 teaspoon salt, or to taste

1/2 teaspoon red chilli powder

1 teaspoon chaat masala

Method:

1- Take puffed rice in a large bowl. Add 5-6 pieces of papdi, roasted peanuts and sev.  

2- Add potatoes, tomatoes, onions and green chillies. 

3- Add red chilli powder, chaat masala powder and salt to the bowl.

4- Add tamarind chutney, green chutney along with a dash of fresh lemon juice and mix all the ingredients well.

5- Garnish it with Sev and freshly cut coriander leaves. Serve immediately otherwise it will become soggy. If preparing for guests, prepare all dry ingredients and wet ingredients separately and then mix them just before serving so that the bhel remains crunchy.

3) Dahi Baray Chaat

Ingredients:

250 gm boiled chickpeas

1/2 tbsp mint coriander chutney/green chutney

1 tbsp tamarind chutney 

1 tbsp roasted cumin

1 tbsp Green Coriander

1 onion cubed

4 Tomatoes cubed

1-1/2 cup Yogurt

2 boiled potatoes (peeled and cut into cubes)

For the baray:

1-1/2 cup Daal Mash 

½ cup Water

Salt as per taste

½ tsp Baking soda 

4 tbsp Gram Flour 

1/2 tbsp Roasted Cumin

1 tbsp Red Chili Powder 

1 -1/2 tbsp Chaat Masala 

Method:

To make the baray

1- In a grinder, add daal mash and water and grind it.

2- In a bowl, add the grinded paste, salt, baking soda, gram flour, roasted cumin, red chili powder, chaat masala (1/2 tbsp) and mix it. Refrigerate for 25 minutes.

3- In a pan, add cooking oil and using a tablespoon make balls of the paste and fry them. 

5- Soak the Bhally in the water at room temperature for 15-20 minutes.

Chaat

6- Now, in a bowl, add salt, yogurt, cumin, green coriander and mix it well.

7- Add potatoes, bhally, onion, chickpeas, tomatoes, green chutney, yogurt, tamarind chutney and mix. Sprinkle chaat masala and papri on top before serving.

4) Samosa Chaat

Ingredients:

2 Samosas

Papdi

3 Tbsp yogurt

1/4 onion, finely chopped

1/4 tomato, finely chopped

Coriander leaves, finely chopped

2 tsp mint coriander chutney/green chutney

2 tsp tamarind chutney

1/2 tsp red chilli powder

1/2 tsp chaat masala

1 cup Sev

Salt to taste

Method:

1- Place two hot samosas on a plate and break them into small pieces using the back of a spoon. 

2- Whisk the yogurt using a fork to make sure there are no lumps. Now, pour the yogurt over the samosas.

3- Add the green chutney and tamarind chutney on top. If you like the chaat a little more sweet than spicy, then add more tamarind chutney.

4- Add chopped onion and tomatoes.

5- Sprinkle chaat masala, papri and sev over the chaat for extra crunchiness.

5) Sev Puri Chaat

Ingredients:

6 small papdis

1 potato (boiled and cut in cubes)

6-7 tsp green chutney

6 tsp tamarind chutney

3 tbsp onion, finely chopped

3 tbsp tomato, finely chopped

¼ tsp red chilli powder

½ tsp roasted cumin powder

pinch of chaat masala

¼ cup sev

1 tsp coriander leaves, finely chopped

Method:

1- Place the papdis on a plate and place a tsp of boiled potato on top of each.

2- Add a tsp of green chutney and tamarind chutney on top of each.

3- Sprinkle finely chopped onions and tomatoes over each of them. 

4- Then sprinkle chilli powder, roasted cumin powder, chaat masala over all. 

5- Then sprinkle and spread sev on top of them. You can add finely chopped coriander leaves on top if you wish.

6) Fruit Chaat

Ingredients:

2 medium apples

2 large bananas

1 orange/ guava/ pomegranate any other fruit you like

1 cup grapes

1/2 teaspoon chaat masala, optional

1/4 teaspoon sugar, optional

1 large lemon or lime juice

Some water/ orange juice

Method: 

1- Chop all the fruits and place in a bowl.

2- Add some water mixed with sugar or any juice of your choice. Mix well and serve.


7) Kala Chana Chaat

Ingredients: 

2 Cup kala chana (Black Chickpeas)

1/2 cup onion, finely chopped 

1/2 cup tomato, finely chopped

1 tbsp chaat masala

Salt To Taste

1 tbsp roasted cumin powder 

4 tbsp tamarind chutney 

4 tbsp green chutney 

2 green chillies, chopped (optional)

2 tbsp coriander leaves, chopped

Method:

1- Boil black chickpeas. Strain the cooked chickpeas and let them cool completely.

2- In a large mixing bowl add chickpeas, tomatoes, onions, coriander, chaat masala powder, roasted cumin powder, tamarind chutney, green chutney and toss well to combine.


8) Moong Sprouts Chaat

Ingredients:

1 cup moong sprouts boiled

1/4 cup black channas

 1 medium onion, finely chopped

 1 medium tomato, finely chopped

1 medium potato (boiled)

Green chilli, finely chopped

2 tablespoons lemon juice

1-2 tbsp green chutney

1-2 tbsp tamarind chutney

Chaat masala to taste

Salt to taste

1 tablespoon red chilli powder

2 teaspoons dry mango powder

2 teaspoons chaat masala

2 tablespoons, fresh coriander leaves chopped 

2 tablespoons sev and some papri

Method

1- Take moong sprouts, kala chana, onion, tomato, potato, green chillies, lemon juice, salt, red chilli powder, dried mango powder, chaat masala and coriander leaves in a large bowl. Add the green chutney, tamarind chutney, chaat masala and mix well.

2- Garnish with sev and papri and serve.

9) Aloo Tikki Chaat

Ingredients

For aloo tikki:

2 boiled potatoes (peeled and mashed)

½ tsp red chilli powder

¼ tsp turmeric

2 tbsp corn flour

½ tsp garam masala

½ tsp dry mango powder

4 tsp oil, for roasting

¼ tsp chaat masala

salt to taste

½ tsp ginger-garlic paste

For chaat:

2 tbsp yogurt

1 tbsp green chutney

1 tbsp tamarind chutney

pinch of red chilli powder

pinch of salt

1 tbsp onion, finely chopped

1 tbsp tomato, finely chopped

handful of sev, fine

pinch of cumin powder

pinch of chaat masala

few coriander leaves

Method:

1- In a large mixing bowl, add the two boiled and mashed potatoes. Add ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp garam masala, ½ tsp dry mango powder, ¼ tsp chaat masala, ¼ tsp salt and ½ tsp ginger-garlic paste. Also add 2 tbsp corn flour and combine well.

2- Grease your hands with oil and prepare small patties. Roast on a frying pan in hot oil.

3- Place the preparef tikkis on a plate. Top with 2 tbsp yogurt.

4- Add 1 tbsp green chutney, 1 tbsp tamarind chutney, pinch of chilli powder and salt.

5- Also add 1 tbsp chopped onion and tomato.

6- Garnish with sev, pinch of cumin powder, chaat masala and coriander leaves.
